Britannia Kitchen Ventilation has installed new extract canopies and remote air-supply plenums to ventilate the busy production kitchen of Kettleby Foods in Melton Mowbray, which produces a wide range of chilled foods for the British market.

Large food-production facilities combine hot cooking processes with low ambient temperatures, which leads to significant amounts of condensation on the internal and external surfaces of the canopies. To overcome this problem, an internal drain system channels the condensate to low level. The drainage system can be removed to allow for deep cleaning.

Because the canopies are mounted high above large cooking vessels, it is difficult to remove filters, so a special tool was designed to simplify this task.
